For this sparkling we’ve choosen Chardonnay & Weißburgunder Grapes. Handpicked end of August, direct pressed whith the whole clusters. 100% spontaneously fermentation. The still fermenting juice was filled into a bottle into a pressure bottle. 8 month on the yeast. Degorgement: April.

PÉTILLANT NATUREL – Pet Nat is a sparkling wine – a relatively old method of sparkling wine. The fermenting juice is filled in a pressurized bottle where it finishes its fermentation, whereby the natural carbon dioxide is enclosed in the bottle. Aged on the lees for 8 months then riddled and disgorged per hand. And ready is the JOMA sparkling. No sulfur from start to finish.
