REDMONT 2007
- > Grapes: 55% Zweigelt, 15% Blaufränkisch, 10% Cabernet Sauvignon, 10% Shiraz, 10% Merlot
- > Vineyard and soil: The name REDMONT (Rothenberg) is a synonym for the Southern slopes with their typical red gravel layers. These meagre soils produce wines of great structure, fine aromas and high longevity.
- > Harvest: Early to end of September
- > Fermentation: 14 days fermentation on the skins at 30-32°C, followed by biological acid reduction
- > Vinification: 16 months in French oak barriques
- > Alcohol: 13.5%vol, > Residual sugar: 1.8g/,l > Acidity: 5.2g/l
- > Description: Intense ruby-garnet, violet reflexes, in the nose smoky with a mineral edge; slightly leafy, wild cherry fruit, very elegant on the palate, slightly redolent of wines from the Northern Rhone area, very tight texture with great fruity sweetness in the finish
- > Recommended with: Ideal with venison and dark meat dishes with rich sauces, as well as soft cheeses
